GAZPACHO MANCHEGO


Ingredients (serve 4):

  • 1 partridge
  • ½ rabbit
  • 1 garlic clove
  • 2 matured tomatoes
  • ½ pepper
  • ¼ kg mushroom
  • 1 thyme
  • 2 bay leaves
  • Bread without yeast
  • Olive oil

Preparation:

Chopped the tomatoes and the peppers, and peal the garlic. Cut the rabbit and the partridge. Cut the bread without yeast in small pieces (need 4 handfuls). Put the bread in a little pot with water and heat. Put olive oil in a pan and fry the rabbit and the partridge for 3 minutes. Add bay leaves, garlic, tomato and pepper. Heat it all over a low fire for 10 minutes. Then add hot water and salt, and cook for 20 minutes. Prepare a thyme infusion (a little glass). Add the thyme with the bread. Water and chop the mushrooms and put them in the pan, cook it all till the meat is tender (15 minutes more). Let it stand before serve.
