JUDIONES DE LA GRANJA CON CHORIZO


Ingredients (serve 8):

  • 750 g beans from La Granja
  • 4 pig’s trotters
  • 2 pig’s ears
  • 2 chorizos de Cantimpalo
  • 2 morcillas extremeñas
  • 100 g chopped bacon
  • 2 onions
  • 5 garlic
  • 2 bay leaves
  • salt
  • olive oil
  • 1 spoon of paprika

Preparation:

Put the beans in cold water during 10 or 12 hours. In a pot put cold water and add the beans with all the meat (trotters, ears, chorizos, morcilla and bacon) and a whole pealed onion, three garlic, two bay leaves and salt. Bring to a boil and over a low heat boil for 2 hours. In a pan fry with olive oil, half chopped onion, two garlic and a spoon of paprika. Add to the pot and cook over a low heat for half an hour more.

Serve the beans and the meat in separate dishes.
