Ingredients for 4 people:
- 1 large potato per person
- 1 large onion
- 1 red pepper
- olive or vegetable oil
- salt
Preparation:
Peel the potatoes and cut them into squares. Slice the onions, but not too fine. Do the same with the pepper. Fry it all in a frying pan with plenty of oil until the ingredients begin to turn golden. Remove all the ingredients and place them on a large plate or tray covered first with paper towels to drain as much oil as possible.
Beat the eggs in a bowl (4 to 6, depending on whether you would like the omelette to be more or less spongy). Add a little salt. Add the potatoes, onion and pepper to the eggs in the same bowl.
Clean the frying pan you used or use a new one (it's important to use a non-stick pan with Teflon, for example). Add a little oil and spread the mixture around the frying pan. Let it cook about 10 minutes on low heat. Use a fork to check whether the inside is done and then turn it over using a plate. Let it cook another 5 minutes on the other side. It’s ready to eat!
